Vegan Sweet and Sour

Ingredients
  

  • 75 ml Vinegar White
  • 50 ml Tomato Sauce
  • 1 tablespoon Sugar You might want more sugar depending on your taste 😊
  • 250 grams Soya chunks You can easily leave these out and just use Vegetables 😊
  • 1 Red onion
  • 1 Pepper
  • 1 Carrot
  • 1 Pineapple Keep the pineapple juice!
  • 1 Tomato
  • 1 teaspoon Ginger powder
  • 1 tablespoon Coconut Oil
  • Pinch Salt

Method
 

  1. Mix the vinegar, tomato sauce and sugar together.
  2. Marinate the soya chunks in the sauce for extra flavour 😀
  3. Chop up your vegetables into bite sized squares
  4. Cut your pineapple into small pieces. Remember, keep the juice!
  5. Saute the onions in the coconut oil on medium heat till tender
  6. Add the other veggies, pineapple, pineapple juice and ginger powder. Simmer till tender
  7. Throw in the soya and sauce into the veggie mix
  8. Simmer for 5 minutes for all the flavours to combine 😛
  9. Add salt and more sugar to taste
  10. Serve on a bed of rice or cauliflower rice!

Notes

The great thing about sweet and sour is that you can change it as much as you like! I'd keep the sauce and pineapple the same, but use any vegetables and protein source! 
Other great protein sources could be tofu, vegan chicken strips, chickpeas, or just more vegetables!
