Vegan Liqueur Cupcakes

These creamy liqueur cupcakes are a perfect boozy treat that will be an absolute hit at any gathering that you take them to. They are rich, fluffy, sweet, chocolatey and creamy. The liqueur is added into the cupcake mixture and the icing for an extra kick. Yum!

Ingredients
  

Batter
  • 2 ¾ Cups (346g) Cake Flour
  • 1 tsp (5ml) Baking Powder
  • ½ tsp (2.5ml) Salt
  • ¾ Cups (170g) Vegan Cream Cheese
  • Cups (140g) Coconut Oil
  • 1 Cup (200g) White Sugar
  • 1 Cup (200g) Light Brown Sugar
  • 1 tsp (5ml) Vanilla Essence
  • 3 Flax Eggs
  • ¾ Cups (187ml) Creamy Liqueur
  • ¾ Cups (170g) Chocolate chips
Icing
  • ¼ Cup Coconut Oil
  • ¼ Cup Vegan Cream Cheese
  • 2 Cups Icing Sugar
  • Cup Creamy Liqueur

Method
 

  1. Preheat the oven to 180°C (350°F) and prepare 24 cupcake liners.
  2. Sift the flour, baking powder and salt together.
  3. In the standing mixer, cream the coconut oil and vegan cream cheese.
  4. Add the the sugars and vanilla and beat until blended.
  5. Add the flax eggs and beat again.
  6. With the mixer on low, add the flour mix a little at the time and alternate with the liqueur.
  7. Gently fold in the chocolate chips.
  8. Carefully fill the cups to almost fill.
  9. Bake for 20-25 minutes.
Icing
  1. Cream the coconut oil and cream cheese with your mixer. Slowly add half the icing sugar until it's combined. Pour in the the liqueur and then continue adding the remaining icing sugar.
  2. Ice the cupcakes when they are cool. Decorate with sprinkles and/or chocolate shavings.
  3. Enjoy! 😃

Notes

Don’t over mix your batter - The ingredients only need to be combined for this recipe. Over mixing your batter can cause the cupcakes to be too dense.
Only ice cupcakes that have cooled down completely! - As tempting as it may be to decorate your cupcakes right away, it will be worth it to wait until these Baileys infused cupcakes have cooled down completely.
Check if they are cooked! - Use a toothpick inserted in the middle of the almond cupcakes to ensure that they have cooked through.
Don’t worry if the mixture is very thick, the cupcakes will still bake well. My batter was extremely thick because my kitchen was so cold and the coconut oil hardened!
