Vegan Oil-Free Granola

  • 4 Cups Oats
  • Cups Raw nuts and seeds This can be any of your favourites! I use Almonds, Cashews and Pumpkin seeds mostly. Macadamia nuts are always amazing when roasted 😍
  • 1 teaspoon Salt
  • ½ teaspoon Cinnamon Ground
  • ½ Cup Aquafaba This replaces the melted coconut oil (If you don't mind oil use coconut!)
  • ½ Cup Maple Syrup Sometimes I use honey from our own hives


  • Preheat your oven to 180°C
  • Whisk the aquafaba till fluffy and slowly add in the maple syrup
  • Mix all the dry ingredients together
  • Fold the wet mixture into the dry ingredients
  • Spoon the mixture onto baking tray(s) - You only want a single layer on each tray
  • Bake for 25 minutes, stirring midway
  • *If you are adding coconut flakes to your granola, add them in for the last 5 minutes of baking
  • Let the granola cool before pouring it into an airtight container**
  • ***Add dried fruit after the mixture has cooled


* I love coconut flakes in my Granola! Use your discretion when adding 😀
** Store it in an airtight container so it doesn't get soggy! 
*** Fruits like raisins, cranberries, freeze dried strawberries, etc, should be added after baking 😍 Add as much as you like!
