Vegan Apple Mug cake

Vegan apple mug cakes are perfect if you are craving something sweet and only have 5 minutes to make it! This delicious dessert is perfect in winter or fall to warm your belly while catching up on your favourite series.

Instructions

  • Blend half of the apple pieces with the wet ingredients.
  • In a bowl stir together the flour, sugar and cinnamon powder.
  • With a spoon mix the wet ingredients into the flour mix until you have a uniform batter.
  • Stir the remaining apple pieces into the mix.
  • Pour the batter into a microwave safe mug.
  • Place the mug into the microwave and "cook" it for 1 minute.
  • If your mix is still a bit raw just microwave for another 10 seconds at a time until it is cooked.
  • Enjoy your apple mug cake with some vanilla nice-cream and berries on top!

Notes

  • Let your cake sit for a minute or two so you don’t burn your mouth!
  • The cake will firm up slightly while it cools, so don’t over cook it.
  • I use sweet apples, but if you don’t have you may just have to add a bit more sugar.
  • This little treat does rise, so be sure to only fill your mug half way to avoid your cake overflowing!
