Melt the oil over medium heat.
Dice and saute the spring onion for 2 minutes.
Add the tofu, curry spice, sweetcorn and salt.
Stir all the ingredients together and cook on medium for 7 minutes or until the sweetcorn is hot.
Meanwhile, toast your sliced bread.
Spread some mayo or butter onto the toast.
Spoon the tofu scramble onto your toast and add your sliced avo.
Season to taste and enjoy!
