Vegan Prego Rolls are saucy, spicy and satisfying rolls that make the perfect vegan lunch or dinner! If you’re feeling like a “get your hands dirty” type of meal, this should be top of the list.

These oven-roasted cauliflower steaks make the best prego “steaks” due to their simple flavour that works well with the prego sauce of your choice.
While they’re roasting, make a side dish! I suggest a simple salad or air fryer potato wedges!

All you need are three ingredients for these delicious vegan cauliflower steak rolls! That’s it! Okay, and some seasoning and oil.
- Cauliflower.
- Prego sauce.
- Portuguese rolls.
- Salt and Pepper.
- Olive oil

Instructions for these easy vegan prego sandwiches:
- Preheat oven to 200°C (400°F)
- Slice your cauliflower head into about 1.5cm (0.6 inch) “steaks”. Leaving the large stem on the bottom so they maintain their shape. Keep the extra cauliflower florets for another use.
- Place on a baking tray and rub the “steaks” with oil, prego sauce and a grind of salt and pepper.
- Place them in the oven for 30 minutes, gently turning them once to brown both sides evenly.
- Serve the “steaks” on Portuguese rolls with some more sauce!

- Roasting is the best way to cook cauliflower!
- Cut the cauliflower in the centre to get steaks that hold their shape.
- Marinating the steaks in the sauce will make them more flavourful.
