    Vegan Prego Rolls

    Vegan Prego Rolls are saucy, spicy and satisfying rolls that make the perfect vegan lunch or dinner! If you’re feeling like a “get your hands dirty” type of meal, this should be top of the list.

    These oven-roasted cauliflower steaks make the best prego “steaks” due to their simple flavour that works well with the prego sauce of your choice. 

    While they’re roasting, make a side dish! I suggest a simple salad or air fryer potato wedges!

    🥘 Ingredients

    All you need are three ingredients for these delicious vegan cauliflower steak rolls! That’s it! Okay, and some seasoning and oil. 

    • Cauliflower.
    • Prego sauce.
    • Portuguese rolls. 
    • Salt and Pepper.
    • Olive oil

    🔪 Instructions

    Instructions for these easy vegan prego sandwiches: 

    • Preheat oven to 200°C (400°F) 
    • Slice your cauliflower head into about 1.5cm (0.6 inch) “steaks”. Leaving the large stem on the bottom so they maintain their shape. Keep the extra cauliflower florets for another use.
    • Place on a baking tray and rub the “steaks” with oil, prego sauce and a grind of salt and pepper. 
    • Place them in the oven for 30 minutes, gently turning them once to brown both sides evenly.
    • Serve the “steaks” on Portuguese rolls with some more sauce!

    💭 Top tip

    • Roasting is the best way to cook cauliflower!
    • Cut the cauliflower in the centre to get steaks that hold their shape.
    • Marinating the steaks in the sauce will make them more flavourful.

    Serving suggestions

    I love having a salad, roast vegetables or potato wedges as a side dish with my vegan prego rolls. Or try some delicious Peanut Butter Balls to end the meal!

    📖 Variations

    Peri peri sauce can also be used instead of prego sauce.

    Leftovers

    Cauliflower steaks are best served straight out of the oven, but they can be reheated in the microwave and then placed on the rolls.

    Ingredients
      

    • 1 Cauliflower

    • Serve the “steaks” on Portuguese rolls with some extra sauce drizzled on the rolls.
