    Vegan apple mug cake is a perfect treat if you are craving something sweet and only have 5 minutes to make and eat it! This delicious dessert is perfect in winter or fall to warm your belly while catching up on your favourite series.

    Mug cakes are so simple to make that these will become your go to when you need something sweet. This recipe makes one perfect, moist and fluffy apple cinnamon mug cake that will leave you feeling satisfied and guit-free, since it is so small!

    🥘 Ingredients

    All these simple ingredients are probably already in your kitchen, but if not, they’re super easy to purchase at any shop. 

    The apple cinnamon flavours will remind you of the holidays with their spicy yet homely flavour. 

    Ingredients for the eggless microwave cake:

    • Apple
    • Coconut oil
    • Water
    • Lemon juice
    • Vanilla extract
    • Self-raising flour
    • Brown sugar
    • Cinnamon powder

    🔪 Instructions

    Instructions for this easy one minute mug cake:

    • Chop an apple into quarters and then into slivers. Separate into two piles.
    • Blend half the apple, coconut oil, water, lemon juice and vanilla extract.
    • Mix the flour, sugar, cinnamon powder together.
    • Mix the wet and dry ingredients together.
    • Stir the apple pieces into the mixture.
    • Pour the batter into a microwave safe mug.
    • Microwave the mix on full power for 1 minute.
    • If your mix is still a bit raw just microwave for another 10 seconds at a time until it is cooked.

    💭 Top tip

    • Let your vegan apple mug cake sit for a minute or two so you don’t burn your mouth!
    • The cake will firm up slightly while it cools, so don’t over cook it. 
    • I use sweet apples, but if you don’t have you may just have to add a bit more sugar.
    • This little treat does rise, so be sure to only fill your mug half way to avoid your cake overflowing!

    Serving suggestions

    Add some vanilla nice-cream and berries on top and eat it straight out of the mug!

    These vegan apple mug cakes are best eaten right away.

    If you want to prepare the batter in advance you can, but only microwave the mix just before you are ready to get your sweet fix!

    Why are mug cakes dry?

    This is an easy fix! Just microwave your batter for a little less time. Microwaves have different power levels so some might cook faster than others.

    How do you store a mug cake?

    Mug cake should be eaten straight away. They will just turn hard if you try and store them.

    Self-raising flour works best! Only fill your mug half way to avoid your cake overflowing!

    Ingredients
      

    • 1 Apple chopped into ¼'s and then made into slivers
    • 1 Tablespoon Coconut oil softened
    • 1 Tablespoon Water
    • ½ Teaspoon Lemon juice
    • ½ Teaspoon Vanilla extract
    • 3 Tablespoons Self-raising flour
    • 1½ Tablespoons Brown sugar
    • ½ Teaspoon Cinnamon powder

    Instructions
     

    • Blend half of the apple pieces with the wet ingredients.
    • In a bowl stir together the flour, sugar and cinnamon powder.
    • With a spoon mix the wet ingredients into the flour mix until you have a uniform batter.
    • Stir the remaining apple pieces into the mix.
    • Pour the batter into a microwave safe mug.
    • Place the mug into the microwave and "cook" it for 1 minute.
    • If your mix is still a bit raw just microwave for another 10 seconds at a time until it is cooked.
    • Enjoy your apple mug cake with some vanilla nice-cream and berries on top!
