Oh, Guys… This simple Tofu and Avocado Toast is simply amazing! Tofu is the perfect substitute for scrambled eggs, but with so many extra flavours! And who doesn’t love avo on toast? You can add any of your favourite spices to make this recipe your own!

This delicious tofu scramble and avo is the perfect breakfast or light meal for anytime of the day. It is amazingly quick and simple to make, and the tofu can even be made in advance!
I add curry powder and frozen sweetcorn to the scramble to get the right amount of sweet and spicy flavours.

All these simple 6 ingredients are probably already in your kitchen, but if not, they’re super easy to purchase at any shop.
Ingredients for the Tofu and Avocado Toast:
- Spring onion.
- Tofu.
- Curry powder.
- Frozen sweetcorn.
- Your favourite bread.
- Avocado!
🔪 Instructions
Instructions for this easy avocado and tofu scramble:
- Warm the oil in a pan.
- Saute the diced spring onions on medium heat for 2 minutes.
- Crumble the tofu by hand and add it into the pan.
- Add the curry powder, salt and frozen sweetcorn.
- Mix all the ingredients together and let them simmer on low heat.
- Peel and slice your avocado.
- Toast your bread the way you like it.
- Assemble, season and serve!

Store leftover vegan tofu scramble in the fridge for up to 4 days in an airtight container. Reheat it before serving.

Tofu and Avo Toast
Ingredients
- 15 ml Coconut oil
- 1 Spring onion diced
- 1 block Tofu crumbled
- 10 ml Curry powder
- ½ cup Frozen sweetcorn
- 4 slices Your favourite bread
- 1 Avocado sliced
- 2.5 ml Salt
- Pepper to taste
- Mayo optional
Instructions
- Melt the oil over medium heat.
- Dice and saute the spring onion for 2 minutes.
- Add the tofu, curry spice, sweetcorn and salt.
- Stir all the ingredients together and cook on medium for 7 minutes or until the sweetcorn is hot.
- Meanwhile, toast your sliced bread.
- Spread some mayo or butter onto the toast.
- Spoon the tofu scramble onto your toast and add your sliced avo.
- Season to taste and enjoy!
