    This sugar-free, gluten-free and Oil-free Baked Carrot Cake Oatmeal recipe is the perfect way to start your day on a healthy note. It’s packed with carrots, nuts and seeds to turn an old-fashioned favourite into something new and exciting! Use your homemade Coconut Milk for extra flavour!

    Baked Carrot Cake Oatmeal with Cashew Cream.

    Oats are such a versatile breakfast option, and this is my new favourite! Pop it in the oven while you get ready for your day to make your home smell amazing, and start your day with a healthy meal! You can eat it straight out of the oven, and serve it with my delicious refined sugar-free Cashew Cream!

    Ingredients

    These simple ingredients will turn plain oats into a delicious, naturally sweetened breakfast!

    Baked Carrot cake oatmeal ingredients.
    • Oats
    • Grated Carrot
    • Coconut Flour
    • Peanut Butter
    • Raisins
    • Cinnamon Powder
    • Chia Seeds
    • Flaxseed Powder
    • Sunflower seeds
    • Pumpkin Seeds
    • Almonds
    • Salt
    • Coconut Milk

    Instructions

    Prepare this recipe in under 5 minutes, and let it bake while you get ready for your day!

    Combine all the ingredients in an oven-proof dish.

    Pour the coconut milk over the oat mix and stir gently.

    Place the dish into the oven and bake for 40 minutes at 180°C (356°F).

    Serve immediately with some sweet Cashew Cream!

    Substitutions

    • Coconut Flour - instead of coconut flour, you can use any other gluten-free flour or cake flour.
    • Nuts and seeds - use any type of nuts and seeds that you prefer instead of the ones I used.

    Equipment

    I used this Glass Oven Dish! I love how easy it is to use and doesn't need to be preheated.

    Storage

    This oatmeal is best served hot, but you can keep it in an airtight container and reheat it when you want to eat it. It will stay fresh for 2 days.

    Yes! This recipe is sugar-free, oil-free and gluten-free, making it a healthy breakfast!

    My oatmeal is gooey, how can I fix that?

    Simply bake your oatmeal for another 5 minutes! Be sure to keep an eye on it so it doesn't burn!

    • 1 Oven proof glass dish

    Ingredients

    • 2 Cups Rolled Oats
    • 1 Carrot Grated
    • ⅓ Cup Coconut Flour
    • 2 tablespoon Peanut Butter
    • 1 tablespoon Cinnamon powder
    • 1 tablespoon Chia Seeds
    • 2 tablespoon Flaxseed powder
    • 2 tablespoon Sunflower seeds
    • 2 tablespoon Pumpkin Seeds
    • 2 tablespoon Raisins
    • ¼ Cup Almonds
    • 2 ml Salt
    • 2 Cups Coconut Milk

    Instructions

    • Preheat the oven to 180°C (356°F).
    • Combine all the ingredients in your oven-proof dish.
    • Gently pout the coconut milk over the dry ingredients. Stir to combine completly.
    • Place the oatmeal into the oven, and bake for 30-40 minutes.
    • Enjoy hot with some Cashew Cream!

    Notes

    • Coconut Flour - instead of coconut flour, you can use any other gluten-free flour or cake flour.
    • Nuts and seeds - use any type of nuts and seeds that you prefer instead of the ones I used.
